One of my comfort foods is bread pudding. It reminds me of home and my family dinners. It is filling, warm, and oh-so-delicious! So when I finally perfected this recipe I made it for about a week straight and have made it for special occasions and big dinners ever since! It is a favorite among my family and a big hit among guests. It is the perfect ending to a nice meal. This bread pudding also makes a great breakfast the next morning if I do say so myself!
Ingredients
10 cups day old cubed French baguette (about 1 inch cubes)
10 eggs
2 1/2 cups whole milk
2 cups heavy cream
1 cup sugar
3/4 cup melted Irish butter (Can sub with any salted butter but I recommend Kerry Gold Irish butter for best flavor)
1 1/2 tsp ground cinnamon
1 TBS vanilla extract
Caramel Sauce
1 cup raw sugar
1/4 cup water
1 tbs lemon juice
2 tbs butter
1 cup heavy whipping cream
- Preheat Oven to 350 degrees
- In large bowl whisk eggs, milk, heavy cream, sugar, melted butter, ground cinnamon, and vanilla.
- Fill greased 13 X 9 inch pan with cubed French bread, pour mixture over bread evenly
- Bake uncovered at 350 degrees for 40 – 45 minutes
- In a pan bring sugar, water, and lemon juice to a boil
- Reduce heat to medium and cook until sugar is dissolved and turns a dark amber color
- Stir in butter until melted
- Slowly stir in heavy cream
- Once bread pudding is out of the oven let sit for 5 minutes and pour caramel evenly over the top.
- Serve and enjoy!
And as I mentioned above, if you want to eat it for breakfast the next day just put it in the fridge over night and slice up some bananas to eat with it cold the next morning! Don’t let anyone tell you bread pudding is not a breakfast food!
