Calzone Recipe 3 Ways

I love to experiment in the kitchen. Experimenting with my pizza dough recipe lead to trying to make calzones. Then I wanted to switch it up a little bit and try something other than a plain pizza calzone. However, the taste buds in my family are so different, I ended up making three different kinds!

Calzone Dough Recipe


Ingredients

2 to 2-1/3 c flour

2 1/4 tsp fast-acting yeast

2/3 cup hot water

3 tablespoons extra virgin olive oil plus extra for drizzle

1/2 tsp sugar

2 tsp sea salt

handful of cornmeal

Mrs. Dash® Garlic and Herb SALT-FREE seasoning blend

  1. Preheat the oven to 375° and warm up a pizza stone.
  2. Add 1 1/2c flour, olive oil, yeast, hot water, sugar, sea salt, and mix. Slowly add more flour until a slightly sticky dough ball forms.
  3. Move to a floured surface and knead in the flour until smooth. Let rest for 10 minutes.
  4.  Separate the dough into two balls. This recipe will make two medium sized calzones.

Reuben Calzone

Do you love Reuben sandwiches? This is the calzone switch up for you! Filled with oozing with melted swiss cheese, tangy sauerkraut, and juicy corned beef. Dip in thousand Island or this tangy Dijon Sauce I make every year for St. Patrick’s Day.

1/2 c corned beef brisket

1/2 c swiss cheese

1/4 c sauerkraut

Layer the corned beef first then sauerkraut (very well drained), then cheese onto one side of the crust. Leave a 1/2 in gap around the edge.

Chicken Bacon Ranch Calzone

This one is for the picky eaters! Everyone loves a chicken bacon ranch combo! Dip in ranch or marinara.

1/2 c shredded chicken

1/2 c colby jack cheese

1/4 c crumbled bacon

1/8 c ranch dressing

Mix together then fill your crust on one side. Leave a 1/2 in gap around the edge.

Buffalo Chicken Calzone

Wing lovers rejoice in this calzone! Use your favorite wing sauce to toss with the chicken, then fill with cheddar cheese.

1/2 c shredded chicken

1/2 c cheddar cheese

1/8 c of you favorite wing sauce

Mix together then fill your crust on one side. Leave a 1/2 in gap around the edge.

After filling the dough, fold over the other half of the crust and pinch closed with a fork. Brush tops with a mix of 2 tbs butter and 1 TB Mrs. Dash Salt- Free Garlic Herb seasoning. Bake at 375° on the warmed pizza stone for 10 – 15 minutes or until golden. Once out of the oven brush with the butter mixture one more time and let rest for five minutes. Then Enjoy! This recipe also makes great leftovers!

 

***Tip! – coat the pizza stone in a thin layer of cornmeal to prevent burning and sticking!

  5. The chicken bacon ranch calzone sounds amazing. All I’ve ever used is tomato sauce, mozzarella, and pepperoni. Apparently, I don’t get out much. 😂
