Salads are always my go to when I need food but don’t have a lot of time or don’t want something too heavy. They are healthy, easy, and delicious! But sometimes the easy lettuce tossed in dressing gets old so this is one of my favorite recipes to change it up and please my taste buds!
With summer coming soon (yay!) I think we are all thinking about eating healthy and being more active and this flavorful dish is the perfect transition from comforting winter food to fresh summer food!! You will feel so good after eating this and the best part is that it’s something you can make quickly any time of day and it is still satisfying.
Ingredients
2 heaping handfuls spinach
3 Tbs olive oil
2 Tbs balsamic vinegar
2 Tsp seasoning salt
1 Tsp black pepper
5 oz chopped bacon
1 med Fugi apple
1 stock celery
3 large mushrooms
3 oz gorgonzola cheese (optional)
- Chop bacon and throw in pan to cook until slightly crispy.
- Slice mushrooms thin and add them to bacon pan to sautee for about one minute before removing pan from heat.
- Chop apples (1/4 inch), and celery
- Put olive oil, vinegar, seasoning salt, and pepper into one gallon bowl. Mix slightly to make dressing.
- Add in spinach, apples, celery, and the bacon and mushrooms from the pan
- Toss and enjoy! (Sprinkle gorgonzola on top before serving if you want some extra flavor)
The flavor combo of bacon and apple is such a good one! I’m a sucker for a good, hearty salad like this!
