Summer time is the perfect time for a chilled, light pasta salad. This pasta salad has been a go to of mine for a few years now for BBQ’s and potlucks of all kinds. I hope you enjoy this Easy Summer BBQ Pasta Salad as much as I do!
This is an easy recipe to make for a side dish at your BBQ or potluck and also a great side dish for meal prep for the week. Right now since I”m pregnant I am forgoing the meat, but this pasta salad recipe is delicious with salami and mini pepperonis!
The biggest tip I can give you with this recipe is to make sure to use the shaved parmesan cheese! I have used the grated in the past since it is cheaper, but it doesn’t mix up the same. Use the shaved and you won’t regret spending that extra dollar!
Ingredients
- 1/2 diced red bell pepper
- 1/2 diced green bell pepper
- 1 diced cucumber
- 2/3 c shaved parmesan cheese
- 1 box tri colored pasta
- 1 small can of sliced black olives
- 1 pack of Zesty Italian dressing mix
- 1/2 c olive oil
- 1/4 c balsamic vinegar
Directions
Boil the pasta until done. Strain and rinse with cold water twice. Put pasta, diced veggies and olives in a large serving bowl that can be covered. In a cup mix together the oil, vinegar and seasoning pack with a fork then pour over pasta and veggies. Last add the cheese and mix. Cover and let sit in fridge over night. Mix before enjoying.
