I’ve never been much of a fan of lasagna. It is for sure my least favorite pasta dish! But my husband loves it so I’ve tried finding recipes that I enjoy as well! When I first tried a lasagna soup at a friend’s house I knew this was something we could both enjoy! I’ve tried a few lasagna soup recipes and tweaked them to make it perfect for us!
This is the way that we love our lasagna soup! We hope you will love it too.
Ingredients
- 1 lb ground beef
- 1 white onion
- 1 red bell pepper
- 2 cans of crushed tomatoes (28 oz each)
- 1 carton beef broth (32 oz)
- 3 tablespoons Italian seasoning
- 1 tsp chili flakes
- 1 box lasagna noodles
- Ricotta cheese
- Mozzarella cheese
- Parmesan cheese
- Fresh basil*
- Pro-tip! When buying herbs like basil, cilantro, or parsley always buy the little plant at the grocery store! It is the same prices as the prepackaged portions and it lasts longer and tastes better
Directions
- First brown your meat
- Chop your onion and bell pepper
- Add meat, onion, bell pepper, crushed tomatoes, beef broth, and seasoning into 6quart crock pot
- Cook on high for 5-6 hours
- Add broken up lasagna noodles and cook for an additional 30 minutes or until noodles are soft
- Serve with cheese and basil on the table to be added to each bowl as desired!
This is such a fast and easy crockpot recipe! We absolutely love it year round but especially in the fall and winter to warm up after a long day. We hope you’ll enjoy it as well! Let us know what you think in the comments.
